It all started in 2015. I just came back from  my father’s funeral, still very deeply emotional. A lot of memories started coming back to me in a much clearer way. Who my parents truly were to me, their influences in me, the many moments of shared knowledge about cooking with me, and the experiences of our Taste of Manila restaurant venture in 2004. The idea of redemption with a restaurant idea started popping up. It came with a name: Lumpia Mania.

I  thought about opening a restaurant again. This time, I would be making the decisions. I felt like I was zero for one in restaurants. If I can make one succeed, at least I’d be batting a 0.500. So I wrote a lot of ideas one night, and I decided that “lumpia” that would bring Filipino cuisine to mainstream America. I also wrote down my ideas about the logo, which I will share in another story. Then I remember thinking about business models.

I remember how my parents used to take us to Panda Inn Restaurant in Glendale, CA back in the 80’s. They also had one in Pasadena. Everyone raved about their Orange Chicken, though my favorite was their Panda Beef (If you’re ever out in Pasadena, they are still there, on Foothill Blvd., and they still serve Panda Beef). But then they opened Panda Express. One after another after another, until there were hundreds. It all began with their simple menu, and their Orange Chicken. It was very awe-inspiring.

I hope to create a similar experience for America and for Filipino culture. With dishes I remember my parents making for me and my siblings, back in 1977, when I first migrated to  America. We’ve taken the first step, with quite a few of these dishes established: Half-Dynamite Lumpias, Lumpia Burgers, Sinigang Soup, and others. Just like what Panda Express/Panda Inn did, except now in a Filipino restaurant.

All these ideas, written down back in 2015. And now, its time to make it all happen. It’s all very exciting.

CURRENT EXPANSION OPPORTUNITIES

DIGNITY HEALTH SPORTS PARK
We are currently in the process, (contracts have been signed} with Levy Foodservice to be a Permanent Concessionaire at Dignity Health Sports Park in Carson, California. DHSP is a stadium where the Los Angeles Galaxy MLS Soccer Team
plays, with a capacity of 27,000 people in the stadium. We are in the process of opening a concessionaire brick-and-mortar spot at the stadium. There are approximately fifty (50) events held there annually, including soccer games, concerts, and other sports events at this venue. We will need capital to purchase restaurant equipment and utensils, various appliances, POS Systems, and signages for our spot at the stadium. DHSP has already tasted all our food items, and they definitely want to put us in this stadium.

THE ROSE BOWL, DODGER STADIUM, AND CRYPTO CENTER
Levy Foodservice manages
The Rose Bowl (90,000 Seating Capacity)
Dodger Stadium (56,000 Seating Capacity)
Crypto Arena (20,000 Seating Capacity)
We are in talks with Levy Foodservice to be in these locations as early as the first half of next year. We will also need to raise capital to open Lumpia Mania in these stadiums.
Matthew Lindblom is the Executive Chef and Manager at Levy Foodservice, with his home stadium at DHSP. He is our main contact with Levy Foodservice. Matt and Levy are also putting together a “package” to include us as one of the Main Concessionaires for Levy Foodservice in contracting and managing numerous stadiums all over the United States. Our future is very promising.

POMONA FAIRPLEX:
Another location and a very viable opportunity in the process is with the Los Angeles County Fair, to be held at the Pomona Fairplex in CA for the entire month of May 2024. We are waiting on their management team to taste and try our food items and negotiate a profit-based agreement similar to the DHSP residency. Sherry Flores is the main contact for this promising venture for Lumpia Mania.

SCALING VIA FRANCHISE MARKETING SYSTEMS
In a nutshell, this is how franchising works: Once Lumpia Mania is available for franchising, with the help of Franchise Marketing Systems, we can sell each location and charge a franchise fee of $40,000.00. Depending on the location, the franchisee will cover the costs for the opening of one location (anywhere from $150k to $500k depending on location), run it themselves, and Lumpia Mania will receive 7% of the gross income from each location. Of
course, with Lumpia Mania’s approval and discretion on how each location is operated. There are also many other ways to add income from each franchise location, such as percentages from the POS Systems, selling our branded paper goods, our bottled sauces and
marinade, and other product sales to the franchisees.

As mentioned, we are working with Franchise Marketing Systems to help develop our Franchise Package Program. They are highly recommended to us by at least two local restaurant chain owners that we personally know, Tony Macasieb of Tony’s BBQ, and James and Ginger Dimapasok of Café 86. Tony has nine locations of his own, and is in the same process of working with FMS as we are. James and Ginger currently have eight locations, and
have just sold 15 franchise locations with the help of FMS.
There are two steps to Franchise Development. One is to put together the Franchise Package. This includes the initial
Franchise Strategic Planning, Legal Document Development, Operations Services, Franchise
Marketing, and Ongoing Support.
This process will assist us in putting together our legal and operations systems on our own. We need this outside professional assistance to take us to
the next level. Once our Franchise Package is completed, FMS will assist us in marketing our program to their list of franchisees. The cost of this Franchise Development is $40,000.00, as described in detail on the Franchise Development Proposal from FMS. Anthony Feola is our
main contact with FMS.

SCALING VIA POSSIBLE FUTURE LOCATIONS

On top of our Stadium Locations and Franchising Systems, we have received numerous requests to open various locations of our own from property managers and owners, ranging from nearby Azusa, West Covina, Rancho Cucamonga, Anaheim, Temecula, Laguna Niguel, Huntington Beach, South Los Angeles, Los Angeles, Topanga, Studio City, Burbank, and Glendale.

As mentioned previously, we are considering a “food court” type location for the next two to four locations. Food Courts have a much higher chance of thriving as there will be no need for a major marketing budget to get people to visit our location. We have spent almost zero amounts on marketing at our current location. Social Media has been highly successful for us, and we are just getting started.
We are in a “small pond” at Glendora, CA, and as soon as we open our Concessionaire Locations at the stadiums and the LA County Fair, we will get much more national exposure.
